One of the greatest things about owning a motorhome is having the conveniences of home, on the road! Let’s face it, eating fast food and at restaurants over and over again gets old…and pricey! Most class B motorhomes and RV’s come with cooking equipment. Bringing a little taste of home on the road can be great for your budget and super enjoyable.
You don’t have to be a Michelin-rated chef in order to enjoy some delicious meals from the comfort of your own motorhome. Below are some simple but tasty recipes that are great for your next road trip.
Breakfast:
Breakfast in a Bag
Prep time: 20 minutes
Cook Method: Range Top
Ingredients: Diced cooked ham, cooked bacon pieces, crumbled cooked sausage, chopped onion, diced peppers and tomatoes, sliced mushrooms, grated cheese, eggs, anything else your like
Directions: Crack two or three eggs in a boilable*, re-sealable bag and break them up by squeezing the bag, then add whatever ingredients you like in an omelet and again mix together by squeezing the bag. Squeeze as much air as possible out of the bag and seal it shut. Have a big pot of boiling water ready, and drop the bags into the water and boil for 12-15 minutes. Be sure to keep the water boiling. Don’t put too many bags in at once to aid in timing. Use a felt tip pen to mark on each bag when the omelet will be done (e.g. 10:53, 11:04, etc.). Be sure to put the person’s name on the bag also. Remove from water and slide a perfect omelet onto your plate. Have salt, pepper, salsa, ketchup and other condiments ready. Enjoy!
*Note: Be sure to use a boilable bag. Not all bags can stand up to high heat!
Lunch:
Campfire Mac n Cheese
Prep Time: 25-30 minutes
Cook Method: Campfire
Ingredients: 1 disposable pie pan, ½ cup cooked elbow macaroni, ¼ cup shredded cheddar cheese, 1 tablespoon Parmesan, 1 tablespoon milk, ½ tablespoon butter, salt and pepper (optional: cooked crumbled bacon, pancetta or ham)
Directions: Combine all ingredients in pan. (Let the kids do it!) Seal container with foil. Hold the packet over the campfire or directly on the grill for 5-7 minutes to melt cheese. Stir and enjoy!
Dinner:
Campfire Chicken Stew
Prep Time: 12-15 minutes
Cook Method: Grill or Campfire
Ingredients: 1 fried chicken (cut up), 3-4 medium potatoes peeled and sliced, 1 cup thinly sliced carrots, 1 medium green pepper sliced, 1 can condensed cream of mushroom soup undiluted, ¼ cup water, ½ teaspoon salt, ¼ teaspoon pepper.
Directions: Grill chicken, covered, for 3 minutes on each side. Place 2 pieces of chicken on each of four double thick heavy-duty foil. Divide the potatoes, carrots and green pepper among the packets. Top each with soup, water, salt and pepper. Fold foil and seal tightly. Grill, covered, for 20-25 minutes on each side or until chicken juices run clear.
These are just a few ideas for some easy and delicious meals anyone can whip up. Cooking out on camping trips can be extremely memorable and fun for families, friends or groups. Everyone can pitch in and the clean up is typically minimal.
